Cashew Mayonnaise

A delicious homemade plant-based version
  • 1 cup raw cashews
  • 1½ tbsp raw apple cider vinegar
  • 2 tbsp lemon juice or the juice of 1 lemon
  • Himalayan salt to taste
  • ¼ cup water
  1. Place all of the ingredients in a high speed blender and blend until smooth and creamy
  2. Store in refrigerator in a glass jar
  3. Enjoy!
